Cherry Vanilla “Ice Cream” (WW-Friendly)

Ingredients (Makes ~6 servings):

  • 2 cups fat-free Greek yogurt – 0 points
  • 1 cup unsweetened almond milk (or skim milk) – 1 point
  • 3–4 Tbsp granular erythritol or monk fruit (instead of sugar) – 0 points
  • 1 tsp pure vanilla extract – 0 points
  • 1 cup fresh or frozen cherries, chopped – 0 points
  • 1 Tbsp cherry juice (optional) – 0 points
  • 1 tsp lemon juice (optional) – 0 points
  • Pinch of salt – 0 points

Instructions:

  1. Prep cherries: Pit and chop cherries. If frozen, thaw first. Optional: blend a few with cherry juice for a swirl effect.
  2. Mix base: In a bowl, whisk Greek yogurt, almond milk, sweetener, vanilla, lemon juice, and salt until smooth.
  3. Add cherries: Stir chopped cherries into the mixture.
  4. Chill: Cover and refrigerate 1–2 hours.
  5. Freeze: Pour mixture into an ice cream maker (or freeze in a shallow dish, stirring every 30 minutes until set).
  6. Serve: Scoop into bowls or cones. Creamy, fruity, and refreshing!
