👩🍳 Instructions:
- Cook the strawberries
Add halved strawberries to a saucepan over medium heat. Cook for 10–15 minutes, stirring occasionally and mashing with a spoon or fork as they soften. - Sweeten & Thicken
Stir in erythritol, lemon/lime juice, and chia seeds. Optional: add vanilla for a flavor boost. - Simmer briefly
Simmer for another 5 minutes. Remove from heat and let sit to cool and thicken naturally. - Store
Pour into a clean jar and refrigerate. Keeps up to 2 weeks in the fridge.

🥄 Your Clean Honey-Sweetened Version:
(Makes a larger batch — about 3–4 jars worth)
- 8 cups strawberries
- ½ cup honey
- Juice + zest of 1 lime
Cook as above, but skip the chia seeds. Honey adds sweetness and shine, but will increase the points to about 1–2 pts per tbsp, depending on how much jam the batch yields.
