👩‍🍳 Instructions:

1. Boil the Potatoes

  • Place unpeeled potatoes in a large pot and cover with salted water.
  • Bring to a boil and cook until fork-tender but not mushy.
  • Drain and let cool slightly.

2. Peel and Cube

  • Once cool, rub off the skins.
  • Cut into bite-sized chunks.

3. Add the Mix-Ins

  • Combine potatoes, chopped eggs, red onion, celery, and bell pepper in a large bowl.
  • Gently toss.

4. Make the Dressing

  • In a smaller bowl, whisk together: light mayo, mustard, sweet pickle relish, and brown sugar.
  • Adjust seasoning as desired.

5. Combine & Season

  • Pour dressing over the potato mixture.
  • Fold gently to coat everything evenly.
  • Season with salt and pepper to taste.

6. Chill & Serve

  • Cover and refrigerate for at least 2 hours, or overnight for the best flavor.
