Ingredients:
- 16 oz low-fat or fat-free cottage cheese
- 2 tablespoons honey (or sugar-free syrup)
- ½ teaspoon vanilla extract
- Pinch of sea salt
- 6 dates, soaked if hard
Instructions:
- Blend cottage cheese, honey (or substitute), vanilla, and sea salt until smooth.
- Add dates and pulse until they’re broken up but still chunky.
- Freeze mixture in a bowl or loaf pan for 3–4 hours until firm.
- Serve and enjoy!
