Sesame Ricotta & Tomato Toast

Drizzled with Olive Oil – Quick & Easy Snack

Ingredients (makes 4 servings):

  • 4 slices sourdough or rustic bread (about 40g each)
  • 1 cup part-skim ricotta cheese (about 240g)
  • 2 medium ripe tomatoes, sliced
  • 2 tbsp olive oil
  • 1 tsp sesame seeds
  • 1/2 tsp flaky sea salt
  • 1/4 tsp black pepper
  • Fresh parsley or basil for garnish
  • (Optional) 1 garlic clove for rubbing on toast

Instructions:

  1. Toast the bread slices until golden and crispy. Optionally rub with garlic.
  2. Mix ricotta with a pinch of salt and a drizzle of olive oil if desired.
  3. Spread ricotta on each slice of toast, then top with tomato slices.
  4. Drizzle olive oil over the top, sprinkle sesame seeds, sea salt, and black pepper.
  5. Garnish with fresh herbs.
  6. Serve warm, optionally with a salad or tea.
