Zero Point Cauliflower Rice Stir-Fry

Ingredients:

  • 1 cup cauliflower rice — 0 points
  • 4 oz Tyson chicken breast (grilled or cooked without added fat) — 0 points
  • 1/2 cup bell peppers (sliced) — 0 points
  • 1/4 cup onions (sliced) — 0 points
  • 1/2 cup mushrooms (sliced) — 0 points
  • Cooking spray or a tiny bit of oil (optional) — 0-1 point, depending on amount

Instructions:

  1. Spray or lightly grease a pan with cooking spray or 1 tsp oil.
  2. Sauté onions and bell peppers until tender.
  3. Add mushrooms and cook until soft.
  4. Stir in Tyson chicken and cook until heated through.
  5. Add cauliflower rice and cook for 3-5 minutes until warmed.
