Peach Cobbler Pound Cake

🧾 Ingredients:

For the Peaches:

  • 1 can (29 oz) peaches in juice, drained
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp zero-calorie sweetener (like monk fruit or stevia)

For the Cake:

  • 1/2 cup light butter (like Smart Balance)
  • 1 cup zero-calorie sweetener
  • 3 eggs
  • 1 1/2 cups white whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsweetened almond milk
  • 1 tbsp vanilla extract

👩‍🍳 Instructions:

  1. Mix peaches with cinnamon, nutmeg & sweetener.
  2. Preheat oven to 350°F (175°C). Grease a loaf or bundt pan.
  3. Cream light butter & sweetener. Add eggs one at a time, then vanilla.
  4. Mix dry ingredients in a bowl.
  5. Add flour mix & almond milk into wet batter, alternating.
  6. Layer half of the batter, then half the peaches. Repeat.
  7. Bake for 50–60 minutes. Let cool before slicing.
