My Zero Point Dinner

Ingredients:

  • Thin chicken breasts (zero points)
  • Bell peppers and onions (zero points)
  • Yukon Gold potatoes (points depend on portion, check your plan)
  • Green beans (zero points)
  • Pam cooking spray (zero points)
  • Italian seasoning, red pepper flakes, onion powder (zero points)

Instructions:

  1. Sauté peppers and onions in a pan with Pam spray until softened.
  2. Spray chicken breasts with Pam and season with Italian seasoning, red pepper flakes, and onion powder.
  3. Place the chicken breasts on top of the peppers and onions in an uncovered Dutch oven or baking dish.
  4. Roast at 400°F (205°C) for 20 minutes or until chicken is cooked through.
  5. Serve with roasted Yukon Gold potatoes and steamed green beans.
