Cottage Cheese Flatbread Pizza (WW-Friendly!)

🧾 Ingredients (makes 2 servings):

  • 1 cup low-fat cottage cheese – 2 Points
  • 2 eggs – 0 Points
  • 2 tbsp grated parmesan – 2 Points
  • 1 tsp garlic – 0 Points

Toppings (example for 1 pizza, adjust as needed):

  • 2 tbsp pizza sauce – 0–1 Point
  • ¼ cup part-skim shredded mozzarella – 2 Points
  • 6 turkey pepperoni slices – 1 Point
  • Black olives (optional, 5–6 slices) – 0.5–1 Point

🔥 Instructions:

  1. Blend cottage cheese, eggs, parmesan, and garlic until smooth.
  2. Pour onto parchment-lined baking sheet.
  3. Bake at 400°F (200°C) for 40 minutes.
  4. Let it cool 5–10 min.
  5. Add your toppings and bake another 4–5 minutes until melted and bubbly.
