Peanut Butter Mini Muffins (WW-Friendly)
Ingredients (Makes 12 mini muffins):
- ยฝ cup PB2 (powdered peanut butter), mixed with water โ 1 point
- 2 tbsp creamy peanut butter (optional, adds richness) โ 6 points
- ยผ cup unsweetened applesauce โ 0 points
- ยผ cup zero-calorie sweetener (monk fruit or stevia blend) โ 0 points
- 1 egg โ 0 points
- ยฝ tsp vanilla extract โ 0 points
- ยฝ cup almond flour or oat flour โ 4 points
- ยผ tsp baking soda
- ยผ tsp salt
- 2 tbsp mini chocolate chips (sugar-free like Lilyโs or semi-sweet) โ 3 points
Instructions:
- Preheat oven to 350ยฐF (175ยฐC). Lightly grease or line a mini muffin tin.
- In a bowl, whisk together PB2, peanut butter (if using), applesauce, egg, sweetener, and vanilla.
- Stir in almond or oat flour, baking soda, and salt. Fold in chocolate chips.
- Spoon batter into 12 mini muffin cups (~1 tbsp each).
- Bake 10โ12 minutes until edges are golden and centers are set.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
