Yields: 6 servings (4 oz cups)
📝 Ingredients:
- 8 oz light cream cheese (Neufchâtel or reduced-fat) – 8 Points
- ½ cup heavy cream – 13 Points
- ½ cup unsweetened almond milk (or Fairlife skim milk) – 0–1 Point
- ½ cup Swerve confectioners sugar – 0 Points
- 1 cup frozen raspberries, thawed and drained – 0 Points
- 1 tsp vanilla extract – 0 Points
🍴 Instructions:
- In a mixing bowl, beat the light cream cheese until smooth and fluffy.
- Add the Swerve and continue beating until well combined.
- Mix in the thawed and drained raspberries and vanilla extract.
- Slowly add the heavy cream + almond milk mixture, and beat for 3–4 minutes until light and whipped.
- Divide evenly into 6 small containers (about 4 oz each).
- Chill in the fridge for at least 1 hour before serving.
