Ingredients:
- 1 medium zucchini, grated (about 2 cups) – 0 points
- 2 tbsp chia seeds – 4 points
- 3 tbsp water – 0 points
- 1/3 cup almond flour (instead of 1/2) – 6 points
- 1 egg – 0 points
- Spices: 1/2 tsp garlic powder, 1/2 tsp dried oregano, 1/2 tsp salt – 0 points
- (Optional): Sprinkle of fat-free mozzarella or nutritional yeast for flavor – 0–1 point max
Instructions:
- Preheat oven to 375°F (190°C), line a tray with parchment.
- Mix chia seeds with water, let gel (10 mins).
- Squeeze liquid from grated zucchini.
- Mix everything together in a bowl.
- Spread thin on baking tray to form crust.
- Bake 20 mins, add toppings if desired, bake 10 more mins.
