Parmesan Crusted Chicken (Serves 2)

Ingredients:

  • 2 thin-sliced boneless, skinless chicken breasts
  • Salt, pepper, garlic powder, dried herbs (0 points)
  • ¼ cup grated reduced-fat Parmesan cheese (3 points)
  • Olive oil spray (instead of oil & butter – 0 points)

Instructions:

  1. Season chicken with garlic powder, herbs, salt, and pepper.
  2. Press Parmesan onto one side of each piece.
  3. Spray a nonstick pan with olive oil spray and cook chicken, Parmesan side down, until golden.
  4. Flip and cook through (about 3–4 mins per side).
