French Onion Cauliflower Bites

Ingredients:

  • 1 large onion, halved and sliced – 0 points
  • 5 cups cauliflower slices – 0 points
  • 1 tsp Worcestershire sauce (veg-friendly) – 0 points
  • ¾ tsp dried thyme – 0 points
  • ½ tsp garlic powder – 0 points
  • ½ tsp salt – 0 points
  • ½ tsp ground black pepper – 0 points
  • 1 tsp olive oil – 1 point
  • ¼ cup fat-free shredded cheese (or light mozzarella) – 1 point
  • Cooking spray – 0 points

🔥 Instructions:

  1. Preheat oven to 450°F (230°C). Coat a baking sheet with cooking spray.
  2. In a nonstick pan, sauté onions in 1 tsp olive oil for about 5 mins. Add Worcestershire, thyme, ¼ tsp pepper, and cook on low until golden and soft (10 more mins). Add a splash of water if it dries out.
  3. Arrange cauliflower slices on the baking sheet. In a small bowl, mix garlic powder, salt, and a little water. Brush it over the cauliflower.
  4. Roast cauliflower for 10 mins. Remove, top with caramelized onions and cheese.
  5. Return to oven for 2–3 mins, until cheese melts.
