Lighter Chicken Broth Mashed Potatoes

🧂 Ingredients:

  • 4 medium potatoes, unpeeled6 points
  • Cooking spray (instead of oil) – 0 points
  • 1 cup low-sodium chicken broth1 point
  • 1 tbsp light butter2 points
  • 2 tbsp fat-free sour cream0 points
  • Chopped chives – optional, 0 points
  • Salt and pepper – to taste – 0 points

🔥 Instructions:

  1. Wash and halve the potatoes (don’t peel). Spray with a little cooking spray.
  2. Boil them in a mix of chicken broth and water with a pinch of salt until soft.
  3. Drain, saving a little broth. Mash the potatoes with skins on using the reserved broth, light butter, and sour cream.
  4. Season with pepper and garnish with chives if you like.
