🧂 Ingredients:
- 1 medium cauliflower, chopped into small florets – 0 points
- 1 tsp olive oil – 1 point (just enough to coat lightly or use cooking spray)
- 2 eggs – 0 points
- 2 tbsp light cream (15% fat or less) – 1 point
- Salt and black pepper – 0 points
- 30g grated reduced-fat Parmesan – 3 points
- 50g light mozzarella, torn in pieces – 3 points
- Paprika – to taste – 0 points
🔥 Instructions:
- Prep the Cauliflower:
Cut it into small florets. Boil in salted water for about 5 minutes, then drain and dry with a towel. - Roast it:
Place the cauliflower on a baking sheet, spray with cooking spray or drizzle with 1 tsp olive oil, and roast at 200°C (392°F) for about 10 minutes until lightly golden. - Make the mixture:
In a bowl, beat the eggs, cream, pepper, and a little salt. Add in half of the Parmesan and half of the mozzarella. - Combine & Bake:
Mix the roasted cauliflower with the egg mixture. Pour everything into a small baking dish. Sprinkle the remaining cheese and a bit of paprika on top. - Final bake:
Bake at 200°C for 15–20 minutes or until golden and set.
