Cauliflower & Cheese Bake (WW Style)

🧂 Ingredients:

  • 1 medium cauliflower, chopped into small florets – 0 points
  • 1 tsp olive oil1 point (just enough to coat lightly or use cooking spray)
  • 2 eggs0 points
  • 2 tbsp light cream (15% fat or less)1 point
  • Salt and black pepper – 0 points
  • 30g grated reduced-fat Parmesan3 points
  • 50g light mozzarella, torn in pieces3 points
  • Paprika – to taste – 0 points

🔥 Instructions:

  1. Prep the Cauliflower:
    Cut it into small florets. Boil in salted water for about 5 minutes, then drain and dry with a towel.
  2. Roast it:
    Place the cauliflower on a baking sheet, spray with cooking spray or drizzle with 1 tsp olive oil, and roast at 200°C (392°F) for about 10 minutes until lightly golden.
  3. Make the mixture:
    In a bowl, beat the eggs, cream, pepper, and a little salt. Add in half of the Parmesan and half of the mozzarella.
  4. Combine & Bake:
    Mix the roasted cauliflower with the egg mixture. Pour everything into a small baking dish. Sprinkle the remaining cheese and a bit of paprika on top.
  5. Final bake:
    Bake at 200°C for 15–20 minutes or until golden and set.
