Ingredients (makes 12 rolls):
- 2 medium zucchini (about 500g), sliced thin
- 1 tbsp olive oil (reduced from more)
- Salt, to taste
- 150g sliced smoked turkey breast (lean, low sodium)
- 150g reduced-fat Gouda or Emmental cheese, sliced thin
- 100g almond flour (reduced to lower points)
- 1 tsp dried oregano
- 6 cherry tomatoes, for serving
👩🍳 Instructions:
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Arrange zucchini slices on the baking sheet, brush lightly with olive oil, and sprinkle with salt. Bake for 12-15 minutes until just tender.
- In a shallow dish, mix almond flour, salt, and oregano. Lightly coat each zucchini slice with the almond flour mixture, shaking off excess.
- Place a slice of cheese and turkey on each zucchini slice, then roll up. Secure with toothpicks if needed.
- Place rolls on a lined baking sheet. Bake for 20-25 minutes or until golden and crispy.
- Serve warm with cherry tomatoes on the side or on top.
