Ingredients
- 1 medium banana – 0 points
- ½ cup fat-free cottage cheese – 0 points
- 1 tsp vanilla extract – 0 points
- ¼ tsp salt – 0 points
- 1 large egg – 2 points
- ¼ cup powdered peanut butter – 1 point
- 1 cup old-fashioned rolled oats – 3 points
- 35 g (80 chips) Lily’s sugar-free milk chocolate chips – 0 points
Instructions
- Preheat oven: 350°F (175°C). Line a baking sheet with parchment.
- Mash banana & cottage cheese: In a medium bowl, mash banana until smooth, then mix in cottage cheese.
- Add wet ingredients: Stir in vanilla, salt, and egg until smooth.
- Add peanut butter powder: Mix well.
- Combine dry ingredients: Stir in oats and Lily’s chocolate chips.
- Form cookies: Drop ¼ cup portions onto the sheet.
- Bake: 15–18 minutes, until set and lightly browned.
- Cool & serve: Let cool on the pan for a few minutes, then transfer to a wire rack.
