WW Light Cheesecake Brownies

Ingredients:

  • 1 cup whole wheat flour (or all-purpose flour)
  • ยฝ cup unsweetened cocoa powder
  • ยฝ teaspoon salt
  • ยผ cup light butter, melted (or use unsweetened applesauce for fewer points)
  • ยฝ cup granulated sugar substitute (like Stevia or Monkfruit)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cheesecake layer:

  • 6 oz light cream cheese, softened
  • 2 tbsp sugar substitute
  • 1 egg white
  • ยฝ teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease an 8-inch square baking pan.
  2. In a bowl, whisk together flour, cocoa powder, and salt.
  3. In another bowl, mix melted butter (or applesauce) and sugar substitute. Add eggs and vanilla, stirring until smooth.
  4. Slowly fold the dry ingredients into the wet mixture until just combined.
  5. Spread the brownie batter evenly into the pan.
  6. In a separate bowl, beat cream cheese, sugar substitute, egg white, and vanilla until smooth.
  7. Drop spoonfuls over the brownie batter, then swirl with a knife for a marbled effect.
  8. Bake for 25โ€“30 minutes or until set in the center. Let cool before slicing into 16 pieces.
