This creamy Vanilla Frozen Yogurt Ice Cream is rich, smooth, and incredibly satisfying without the extra calories. Made with protein-packed Greek yogurt, sugar-free pudding mix, and a splash of vanilla, it’s a perfect WeightWatchers-friendly dessert that tastes like classic vanilla ice cream.

Ingredients

  • 2 cups nonfat plain Greek yogurt
  • 1 package (1 oz) sugar-free vanilla instant pudding mix
  • 1 cup unsweetened vanilla almond milk
  • 2 teaspoons vanilla extract
  • 2–3 tablespoons zero-calorie sweetener (monk fruit or erythritol), to taste
  • Pinch of salt

Optional

  • 1 teaspoon xanthan gum (for an extra creamy texture)
  • Sugar-free whipped topping for serving (adds points if used)

Instructions

Step 1 – Mix the Base

In a large bowl, whisk together the Greek yogurt, almond milk, vanilla pudding mix, vanilla extract, sweetener, and salt until completely smooth. If using xanthan gum, sprinkle it in while whisking to prevent clumps.

Step 2 – Chill

Refrigerate the mixture for 20–30 minutes to allow the pudding mix to thicken.

Step 3 – Freeze

Pour the mixture into a freezer-safe container.

  • Ice Cream Maker: Churn according to the manufacturer’s instructions (about 20–25 minutes), then freeze for 1–2 hours.
  • No Ice Cream Maker: Freeze for 4–6 hours, stirring vigorously every 45–60 minutes during the first 3 hours to create a smoother texture.

Step 4 – Serve

Let the ice cream sit at room temperature for 5–10 minutes before scooping.

Serve plain or top with fresh berries, sugar-free chocolate syrup, or a dollop of fat-free whipped topping.
