📝 Ingredients:

  • 1 cup light whipping cream (or reduced-fat, if available)
  • 4 oz light cream cheese, softened
  • 1/4 cup powdered erythritol or monk fruit sweetener (0 points)
  • 1 tsp vanilla extract (0 points)
  • 2 tbsp sugar-free berry gelatin powder (0 points)
  • Optional: a small handful of fresh or frozen berries, blended smooth (adds 0–1 point total if used sparingly)

👩‍🍳 Instructions:

  1. Prepare the gelatin
    Dissolve the gelatin powder in 1/4 cup hot water. Let it cool slightly (don’t let it set).
  2. Whip the cream
    In a large bowl, whip the cream until soft peaks form.
  3. Mix the base
    In another bowl, beat the light cream cheese, sweetener, vanilla, and cooled gelatin until smooth.
  4. Fold gently
    Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
  5. Chill or freeze
