📝 Ingredients:

  • 1 cup broccoli florets (0 points)
  • 1 cup cauliflower florets (0 points)
  • 2 tbsp light cream cheese (about 2 points)
  • 1 tbsp fat-free half-and-half or unsweetened almond milk (0 points)
  • 1 tbsp tomato paste (0 points)
  • 1/4 cup part-skim mozzarella, shredded (2–3 points)
  • Garlic powder, salt, black pepper, Italian seasoning (0 points)
  • Optional: fresh spinach or basil, stirred in at the end (0 points)

👩‍🍳 Instructions:

  1. Steam or boil the broccoli and cauliflower until just tender. Drain well.
  2. In a non-stick skillet over low heat, add the light cream cheese and fat-free half-and-half. Stir until smooth.
  3. Mix in the tomato paste and seasonings until the sauce is creamy and well combined.
  4. Add the vegetables to the skillet and toss to coat.
  5. Sprinkle in the mozzarella and let it melt gently.
