- 6 large Halal chicken drumsticks, skin removed (saves 5+ points!)
- 1 cup low-fat buttermilk (or 1 cup skim milk + 1 tbsp vinegar/lemon juice)
- 1 large egg white
- ¾ cup whole wheat flour (or all-purpose if preferred)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- ½ tsp black pepper
- ½ tsp salt
- Pinch of cayenne pepper (optional, for heat)

👩🍳 Instructions
- Marinate:
In a bowl, whisk together buttermilk and egg white. Add chicken drumsticks, coat well, cover, and refrigerate for 2–4 hours for best flavor. - Prepare coating:
Mix flour with paprika, garlic powder, onion powder, oregano, pepper, salt, and cayenne in a shallow dish. - Coat:
Remove chicken from marinade (let excess drip off). Dredge in seasoned flour and place on a rack. Lightly spray both sides with cooking spray. - Air fry or bake:
- Air fryer: 375°F (190°C) for 20–25 minutes, flip halfway through.
- Oven: 400°F (200°C) for 30–35 minutes, flipping once, until golden and crisp.

💡 Tips
✨ Removing the skin makes it much lighter — you’ll still get crispy texture from the coating and spray.
✨ Don’t skip the buttermilk! It keeps the chicken juicy and flavorful.
