Ingredients:

  • 2 cucumbers, peeled and sliced
  • 1 red onion, sliced into rings
  • ½ pint cherry tomatoes, halved
  • ⅓ cup white vinegar
  • 2 tsp oil (light or olive)
  • ⅔ cup water
  • 2 tsp sugar substitute or a small amount of sugar
  • Salt & pepper, to taste

Directions:

  1. Prep the veggies: Slice cucumbers, red onion, and cherry tomatoes.
  2. Make the dressing: In a small bowl, mix vinegar, oil, water, sugar substitute, salt, and pepper.
  3. Combine: Pour the dressing over the vegetables and toss well.
  4. Chill: Refrigerate for about 1 hour before serving.
