Refreshing Shrimp & Cucumber Salad

Ingredients:

  • 1 lb cooked shrimp, peeled and deveined
  • 1 large cucumber, thinly sliced
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh cilantro
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp sugar
  • ¼ tsp red pepper flakes (adjust to spice preference)
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine shrimp, cucumber, garlic, and cilantro.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes.
  3. Pour dressing over the shrimp mixture and toss to coat evenly.
  4. Season with salt and pepper. Serve immediately or chill for later.
