“I made this thinking it’d be a simple lunch… then everyone was hovering around the bowl 😅”
Ingredients:
- 1 lb cooked shrimp, peeled and deveined
- 1 large cucumber, thinly sliced
- 2 cloves garlic, minced
- ¼ cup chopped fresh cilantro
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ½ tsp sugar
- ¼ tsp red pepper flakes (adjust to spice preference)
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine shrimp, cucumber, garlic, and cilantro.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and red pepper flakes.
- Pour dressing over the shrimp mixture and toss to coat evenly.
- Season with salt and pepper. Serve immediately or chill for later.
