Crispy edges, cheesy middle, and a little jalapeño kick — without setting your points on fire!
This easy low-carb bread is perfect with soups, eggs, or just a swipe of garlic butter. Bonus: it makes your kitchen smell amazing. 😋
🍞 Ingredients (makes 9–12 squares)
Dry Ingredients:
- 1 ½ cups almond flour
- 2 tsp baking powder
- ½ tsp garlic powder
- ½ tsp salt
Wet Ingredients:
- 3 large eggs
- 2 tbsp light butter (melted) or olive oil
- ½ cup plain nonfat Greek yogurt (instead of sour cream)
Mix-ins & Toppings:
- ¾ cup reduced-fat mozzarella
- ¼ cup reduced-fat cheddar (optional)
- 1–2 fresh jalapeños, thinly sliced
- Optional: sea salt, chopped parsley or rosemary for garnish
👩🍳 Instructions:
1️⃣ Preheat oven to 375°F (190°C). Line an 8×8-inch pan with parchment paper.
2️⃣ Mix dry ingredients – almond flour, baking powder, garlic powder, and salt.
3️⃣ Add wet ingredients – whisk eggs, melted butter, and Greek yogurt. Combine until smooth.
4️⃣ Fold in cheese and mix well.
5️⃣ Spread batter into pan, top with jalapeños, and drizzle a bit of olive oil.
6️⃣ Bake 25–30 minutes until golden brown and firm in the middle.
7️⃣ Cool 10 minutes, slice, and enjoy!
