Ingredients
- ½ cup unsalted butter (or light butter) – 4 SP
- ½ cup sugar-free sweetener (like Swerve or monk fruit) – 0 SP
- 2 tbsp water – 0 SP
- 1 tsp vanilla extract – 0 SP
- ½ cup chopped almonds or pecans – 2 SP
- ½ cup sugar-free dark chocolate chips – 1 SP
Instructions
1️⃣ Prep the Pan:
Line an 8×8 baking dish with parchment paper. Spread half the chopped nuts evenly on the bottom.
2️⃣ Cook the Toffee:
In a small saucepan, melt the butter with water over medium heat. Add the sugar-free sweetener and stir constantly until it bubbles and thickens (about 5–7 minutes).
3️⃣ Add Vanilla & Pour:
Remove from heat, stir in vanilla extract, and pour over the prepared nuts.
4️⃣ Add Chocolate & Nuts:
Sprinkle sugar-free chocolate chips on top while hot. Let melt slightly, then spread evenly. Sprinkle the remaining nuts on top and press gently.
5️⃣ Cool & Serve:
Allow to cool completely at room temperature or in the fridge until firm. Break into 16 small pieces.
