So I found out you can make sushi with cauliflower rice + cream cheese and now my life is changed 🍣😄
🥢 Here’s what I did:
- Steamed 2 bags of cauliflower rice
- Let it cool and squeezed out all the water (cheesecloth helps!)
- Mixed in light cream cheese until it felt sticky like sushi rice — that’s the magic 💫
- Used soy paper (1 carb) for mine and nori (1 carb) for my husband’s
- Rolled it all up with spicy crab, avocado, cucumber, and a bit more light cream cheese
Second attempt, not a sushi master yet… but honestly? It tastes like I am 🤣
