🌿 Ingredients

- 1 medium onion, diced – 0 points
- 3 cloves garlic, minced – 0 points
- 12 oz lean turkey or chicken sausage (98% fat-free preferred) – 6 points total
- 4 cups low-sodium chicken broth – 0 points
- 4 cups water – 0 points
- 3 large russet potatoes, peeled & diced – 9 points total
- 2 cups chopped kale – 0 points
- 1 cup unsweetened almond milk – 0 points
- Salt & black pepper – 0 points
- Optional: crushed red pepper flakes & grated Parmesan for topping (1 tsp Parmesan = 0 points)
🔥 Instructions
1️⃣ Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté 3–4 minutes until fragrant.
2️⃣ Add sausage slices; cook until browned, about 5 minutes.
3️⃣ Stir in chicken broth, water, and potatoes. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
4️⃣ Add kale and cook another 5 minutes until wilted.
5️⃣ Stir in almond milk, season with salt, pepper, and crushed red pepper.
6️⃣ Serve warm with a light sprinkle of Parmesan if desired.
