Ingredients:
- 1 lb (450 g) baby potatoes, washed & halved – 0 pts
- 1 tbsp olive oil – 2 pts
- 1 tsp butter – 1 pt
- 4 cloves garlic, minced – 0 pts
- ¼ cup fat-free half-and-half – 1 pt
- 2 tbsp grated Parmesan cheese – 1 pt
- 1 tbsp fresh parsley, chopped – 0 pts
- Salt & pepper to taste – 0 pts
Instructions:
1️⃣ Prep & Roast Potatoes
Preheat oven to 400°F (200°C) and line a baking sheet with parchment. Toss halved potatoes with olive oil, salt, and pepper. Spread in a single layer. Roast 25–30 mins until golden and tender, flipping halfway.
2️⃣ Make Garlic Cream Sauce
Melt butter in a skillet over medium heat. Sauté garlic 1–2 mins until fragrant. Stir in fat-free half-and-half and cook 2–3 mins until slightly thickened. Remove from heat, stir in Parmesan until smooth.
3️⃣ Combine & Serve
