Creamy Shrimp & Chicken Skillet (WW-friendly version)

Everyone else had Popeyes, but I fought temptation and made this instead — and honestly, no regrets. Creamy, garlicky, and packed with flavor! 💪

Ingredients:

  • 1 oz light cream cheese
  • 2 tbsp fat-free half & half (or 1 tbsp heavy cream + 1 tbsp unsweetened almond milk)
  • 1 tsp light butter
  • 2–3 oz chicken broth (low sodium)
  • Garlic powder, pink salt & black pepper to taste
  • 8 jumbo shrimp (peeled & deveined)
  • 2 oz grilled chicken tender (sliced)
  • 1 cup spinach
  • 1 Roma tomato, chopped

Instructions:

  1. In a skillet, melt the butter and add shrimp and chicken. Cook until golden.
  2. Add the chopped tomato, garlic powder, salt, and pepper.
  3. Pour in the broth and stir in cream cheese and half & half. Let it simmer until creamy.
  4. Toss in the spinach just until wilted.
  5. Serve warm and enjoy your guilt-free creamy comfort food!
