Ingredients:
- 1 oz light cream cheese
- 2 tbsp fat-free half & half (or 1 tbsp heavy cream + 1 tbsp unsweetened almond milk)
- 1 tsp light butter
- 2–3 oz chicken broth (low sodium)
- Garlic powder, pink salt & black pepper to taste
- 8 jumbo shrimp (peeled & deveined)
- 2 oz grilled chicken tender (sliced)
- 1 cup spinach
- 1 Roma tomato, chopped
Instructions:
- In a skillet, melt the butter and add shrimp and chicken. Cook until golden.
- Add the chopped tomato, garlic powder, salt, and pepper.
- Pour in the broth and stir in cream cheese and half & half. Let it simmer until creamy.
- Toss in the spinach just until wilted.
- Serve warm and enjoy your guilt-free creamy comfort food!
