Coconut Protein Bars

Ingredients:

  • 3 cups unsweetened shredded coconut
  • ½ cup protein powder (vanilla works best)
  • ½ cup powdered sweetener
  • 2/3 cup sugar-free condensed milk
  • 1 cup sugar-free chocolate chips

Instructions:

  1. Mix coconut, protein powder, and sweetener in a bowl.
  2. Add condensed milk and stir until fully combined.
  3. Press mixture into a parchment-lined 8×8-inch pan. Freeze 10 minutes.
  4. Cut into 12 bars.
  5. Melt chocolate chips in 20-second intervals and dip each bar until coated.
  6. Chill until chocolate sets.
