WW Asian Cucumber Salad

WW Asian Cucumber Salad

(2–3 WW points per serving)

Ingredients (Makes about 4 servings):

  • 5–6 Persian cucumbers, thinly sliced
  • 1 tbsp salt (for draining water)
  • 1 tbsp minced garlic
  • 1 tbsp gochugaru (Korean chili flakes — adjust to your heat level)
  • 1 tbsp sesame oil (3 points)
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1½ tbsp sesame seeds (1–2 points)
  • 1 tbsp brown sugar (2 points)

Instructions:

  1. Slice cucumbers and sprinkle with salt. Let sit 15 minutes, then rinse, drain, and pat dry.
  2. Mix garlic, gochugaru, sesame oil, rice vinegar, soy sauce, sesame seeds, and brown sugar in a bowl.
  3. Add cucumbers, toss well, and chill before serving.

💚 Crunchy, spicy, and only about 2–3 WW points per serving!
Perfect side dish for any meal — or just eat it straight from the bowl (no judgment 😄).
