Ingredients (Makes about 4 servings):
- 5–6 Persian cucumbers, thinly sliced
- 1 tbsp salt (for draining water)
- 1 tbsp minced garlic
- 1 tbsp gochugaru (Korean chili flakes — adjust to your heat level)
- 1 tbsp sesame oil (3 points)
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1½ tbsp sesame seeds (1–2 points)
- 1 tbsp brown sugar (2 points)
Instructions:
- Slice cucumbers and sprinkle with salt. Let sit 15 minutes, then rinse, drain, and pat dry.
- Mix garlic, gochugaru, sesame oil, rice vinegar, soy sauce, sesame seeds, and brown sugar in a bowl.
- Add cucumbers, toss well, and chill before serving.
💚 Crunchy, spicy, and only about 2–3 WW points per serving!
