Cool, tangy, and incredibly refreshing — this lightened-up creamy cucumber salad is the perfect summer side. It’s packed with crunch, herby flavor, and a creamy dressing that tastes indulgent but stays low in points.
💙 Ingredients (Serves 4):
- 3–4 Kirby cucumbers, thinly sliced
- ½ small red onion, thinly sliced (optional)
- ½ cup nonfat plain Greek yogurt (instead of sour cream)
- 2 tbsp light mayonnaise
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice
- Salt & black pepper, to taste
👩🍳 Instructions:
Step 1 — Slice & Prep (5 min):
Wash and thinly slice cucumbers (peel if you like). Add to a bowl with thin red onion slices if using.
Step 2 — Make the Dressing (2 min):
In a small bowl, whisk together Greek yogurt, light mayo, lemon juice, dill, salt, and pepper until creamy and smooth.
Step 3 — Combine & Chill (30 min):
Pour dressing over the cucumbers and toss gently to coat. Cover and chill for at least 30 minutes before serving.
Step 4 — Serve:
Top with extra dill and a squeeze of lemon for a fresh finish.
✨ Tips:
- Use fat-free Greek yogurt for extra protein and lower points.
- Swap dill for fresh chives or parsley for a twist.
- This salad tastes even better after a few hours in the fridge!
