WW-Friendly Pickle Pasta Salad 🥒🍝Servings: 6

Ingredients:

  • 12 oz whole wheat or high-fiber rotini (0–3 points, depending on brand)
  • 1/2 cup light mayo (4 points)
  • 1/2 cup nonfat Greek yogurt (0 points)
  • 1/4 cup dill pickle juice (0 points)
  • 1/4 cup chopped fresh dill (0 points)
  • 4 oz reduced-fat cheddar, cubed (4 points)
  • 5 small dill pickles, chopped (0 points)
  • Salt & pepper to taste

Instructions:

  1. Cook pasta, drain, and let cool.
  2. In a bowl, whisk together light mayo, Greek yogurt, pickle juice, dill, salt, and pepper.
  3. Toss the pasta, pickles, and cheese with the dressing until evenly coated.
  4. Chill in the fridge for about 1 hour before serving.
