Creamy, slightly sweet, and perfect for breakfast or a snack!
Ingredients (serves 4):
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/2 cup fresh blueberries
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp vanilla essence
- Optional: sugar-free chocolate chips for topping
Instructions:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, oats, eggs, honey (or maple syrup), cinnamon, and vanilla.
- Gently fold in blueberries.
- Pour mixture into a greased or lined baking dish.
- Sprinkle chocolate chips on top, if using.
- Bake for ~30 minutes, until set and lightly golden.
- Let cool slightly, then slice into 4 servings and enjoy warm.
