Cottage Cheese Blueberry Bake

Creamy, slightly sweet, and perfect for breakfast or a snack!

Ingredients (serves 4):

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla essence
  • Optional: sugar-free chocolate chips for topping

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, oats, eggs, honey (or maple syrup), cinnamon, and vanilla.
  3. Gently fold in blueberries.
  4. Pour mixture into a greased or lined baking dish.
  5. Sprinkle chocolate chips on top, if using.
  6. Bake for ~30 minutes, until set and lightly golden.
  7. Let cool slightly, then slice into 4 servings and enjoy warm.
