Cornbread (WW Style)

Golden, buttery, and satisfying—without blowing your points budget!

Ingredients (8 servings):

  • 1 cup self-rising flour – 11 points
  • 1/2 cup plain cornmeal – 6 points
  • 1/4 cup unsweetened applesauce (swap for butter) – 0 points
  • 2 eggs – 0 points
  • 1/2 cup fat-free Greek yogurt – 0 points
  • 1/4 cup unsweetened almond milk – 0 points
  • 1 tsp baking powder – 0 points
  • 1/2 tsp salt – 0 points
  • (Optional: 1–2 tbsp sugar substitute for sweetness – 0 points)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk eggs, applesauce, yogurt, and almond milk.
  3. Stir in flour, cornmeal, baking powder, salt, and sweetener (if using). Mix until just combined.
  4. Pour batter into a greased 8×8 baking dish.
