Instructions
- Preheat oven to 325Β°F (160Β°C). Lightly grease a 10-inch bundt pan with cooking spray.
- In a large bowl, cream together light butter, applesauce, and sweetener until fluffy.
- Beat in eggs and egg whites, one at a time. Stir in vanilla and lemon extract.
- In another bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to wet, alternating with the soda. Mix until just combined.
- Pour batter into prepared pan.
- Bake 50β55 minutes, or until a toothpick comes out clean.
- Cool in pan 10 minutes, then invert onto a wire rack.
