Ingredients

  • 8 oz whole wheat or gluten-free pasta – 10 points
  • 2 cups fresh strawberries, hulled & sliced – 0 points
  • 2 tbsp balsamic vinegar – 0 points
  • 2 tsp olive oil – 1 point
  • ¼ cup grated Parmesan (or reduced-fat/dairy-free) – 2 points
  • Salt & pepper, to taste – 0 points
  • Optional: fresh basil for garnish – 0 points

Instructions

  1. Cook the pasta: Prepare pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté strawberries: In a skillet, heat olive oil over medium heat. Add strawberries and sauté 2–3 minutes until slightly softened.
  3. Add balsamic: Pour in balsamic vinegar and cook 2–3 more minutes until strawberries are tender and caramelized.
  4. Combine & season: Toss cooked pasta with strawberries. Sprinkle Parmesan, season with salt & pepper. Cook 1–2 more minutes until flavors blend.
  5. Serve: Garnish with fresh basil if desired. Enjoy warm!
