Chocolate Peanut Butter Protein Balls

Ingredients

  • ½ cup fat-free cottage cheese – 0 points
  • ¼ cup natural peanut butter (or powdered peanut butter mixed with water for lower fat) – 3 points
  • 2 tbsp maple syrup or honey – 2 points
  • ½ tsp vanilla extract – 0 points
  • ½ cup almond flour (or oat flour) – 6 points

Optional Chocolate Shell:

  • ½ cup sugar-free chocolate chips – 0 points
  • 1 tsp coconut oil – 1 point

Instructions

  1. Blend: Add cottage cheese, peanut butter, maple syrup/honey, and vanilla to a blender. Blend until smooth.
  2. Mix: Transfer to a bowl and mix with almond flour until combined.
  3. Shape: Scoop mixture into balls (~10), place on a parchment-lined tray. Chill in freezer 10–15 min.
  4. Chocolate shell (optional): Melt chocolate chips and coconut oil in 30-sec intervals, stirring until smooth.
  5. Dip & top: Dip chilled balls into melted chocolate, place back on tray, sprinkle with flaky sea salt.
  6. Set: Freeze at least 30 min before serving.
