Caramel Pecan Fudge

Ingredients

For the Fudge:

  • 1 can (14 oz) fat-free sweetened condensed milk – 24 points
  • 1 bag (11 oz) sugar-free white chocolate chips (like Lily’s) – 33 points
  • 1 tsp vanilla extract – 0 points
  • 1 tbsp light butter – 2 points
  • ¼ cup chopped pecans – 5 points
  • ½ cup puffed rice cereal (or crushed rice cakes, for crunch) – 2 points
  • ¼ cup sugar-free caramel syrup – 0 points

Instructions

  1. Melt the base: In a microwave-safe bowl, combine white chocolate chips, condensed milk, and light butter. Heat in 30-second intervals, stirring until smooth.
  2. Add crunch: Stir in vanilla, pecans, and puffed rice.
  3. Spread & swirl: Pour onto a parchment-lined tray. Drizzle with sugar-free caramel syrup and swirl with a knife.
  4. Chill: Refrigerate until firm.
  5. Cut & store: Slice into 25 pieces. Keep chilled in an airtight container.
