Ingredients (makes 12 muffins)

For the Muffins:

  • 1 cup low-fat or non-fat cottage cheese (240 g)
  • ½ cup almond flour (60 g)
  • ¼ cup coconut flour (30 g)
  • 4 large eggs
  • ¼ cup unsalted butter (60 g), melted
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt

For the Cinnamon Swirl:

  • 2 tbsp unsalted butter (30 g), softened
  • 2 tbsp granulated erythritol (or preferred low-calorie sweetener)
  • 1 tbsp ground cinnamon

Optional Garnish:

  • 2 tbsp chopped nuts (pecans or walnuts)
  • Light sprinkle of extra erythritol-cinnamon mix

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients: In a medium bowl, combine almond flour, coconut flour, baking powder, and salt.
  3. Mix wet ingredients: In a large bowl, blend cottage cheese, eggs, melted butter, and vanilla until smooth.
  4. Combine: Gently stir dry ingredients into wet ingredients until just combined (don’t overmix).
  5. Make cinnamon swirl: In a small bowl, mix softened butter, erythritol, and cinnamon until spreadable.
  6. Assemble muffins: Fill muffin cups about 2/3 full with batter. Drop a small dollop of cinnamon swirl on top of each and use a toothpick to gently swirl it into the batter.
  7. Add garnish: If desired, sprinkle chopped nuts or extra cinnamon mix on top.
  8. Bake for 18-20 minutes, or until golden and a toothpick inserted comes out clean.
  9. Cool: Let muffins cool in the pan 5 minutes, then transfer to a wire rack to cool completely.
