A cheesy, flavorful dinner that’s low-carb and WW-friendly!
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 ½ cups broccoli florets, chopped
- ½ cup reduced-fat shredded cheddar cheese
- 3 tbsp fat-free cream cheese, softened
- ¼ cup plain nonfat Greek yogurt (instead of sour cream)
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & pepper, to taste
- 1 tsp olive oil (or cooking spray)
- 2 tbsp grated Parmesan cheese (optional)
Instructions:
- Prep Broccoli: Steam or microwave until tender (about 2–3 min). Chop finely.
- Make Filling: In a bowl, mix broccoli, cheddar, cream cheese, yogurt, garlic powder, onion powder, salt & pepper.
- Prep Chicken: Slice a pocket in each breast. Season with salt, pepper, and extra spices if desired.
- Stuff: Fill each pocket with broccoli mixture. Secure with toothpicks if needed.
- Cook: Heat olive oil (or spray) in an oven-safe skillet. Sear chicken 3–4 min per side until golden. Sprinkle with Parmesan if using.
- Bake: Transfer skillet to oven at 375°F (190°C) for 15–20 min, or until chicken reaches 165°F (75°C).
- Serve: Rest a few minutes before slicing. Enjoy with roasted veggies or a salad!
