What You’ll Need:
- Chicken tenderloins
- “Healthy Noodles” (Costco brand)
- Zucchini, onion, broccoli (or any veggies you love)
- Coconut aminos (or soy sauce)
- Avocado oil spray
- Sesame oil
- Sweet Thai chili sauce
- Salt & pepper
Instructions:
- Chicken: Season tenderloins with salt & pepper, spray lightly with avocado oil, and air fry at 400°F for 6 minutes. Flip and cook 4 more minutes. Slice when done.
- Veggies: Chop zucchini, onion, and broccoli. Sauté in coconut aminos and a small spray of avocado oil until tender-crisp.
- Noodles: Drain “Healthy Noodles” and warm in a pot with a splash of sesame oil, sweet Thai chili sauce, and more coconut aminos.
- Combine chicken, veggies, and noodles in a large bowl. Toss well and serve warm.
