Cinnamon Raisin Bread Pudding

Ingredients

Instructions

  1. Preheat Oven and Prepare Dish:
    Preheat oven to 350ยฐF (175ยฐC). Lightly spray or grease your baking dish with cooking spray or a small amount of butter.
  2. Prepare Bread:
    Remove crusts if you like. Spread a very thin layer of melted butter or skip for lower points.
  3. Layer Bread and Raisins:
    Place half the bread slices in the dish, buttered side up if using. Sprinkle raisins and cinnamon over them. Top with remaining bread slices.
  4. Make Custard:
    Whisk together milk, Greek yogurt, eggs, and sugar substitute until smooth.
  5. Soak and Bake:
    Pour custard evenly over bread. Let soak 5-10 minutes. Bake 30-35 minutes until set and golden.
  6. Serve:
    Serve warm. Optional: Top with a small dollop of light whipped topping or fresh fruit.
