Ingredients

  • 4 cups diced cooked skinless chicken breast
  • 1/4 cup minced red onion
  • 1/4 cup minced celery
  • 2 heaping tbsp chopped flat-leaf parsley
  • 2 tbsp fresh lemon juice
  • 2 tbsp light mayonnaise
  • 2 tbsp nonfat plain Greek yogurt
  • 2 tsp Dijon mustard
  • Dash hot sauce (optional)
  • Kosher salt & freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine chicken, red onion, celery, parsley, lemon juice, light mayo, Greek yogurt, Dijon mustard, and hot sauce.
  2. Mix well until chicken is evenly coated.
  3. Season to taste with salt and pepper.
